A great introduction to simple Japanese vegan cooking giving the reader a 'feel' for how meals go together in Japan & how food is presented. My gripe is that the author has simply removed the animal ingredients in each recipe & not tried to substitute anything to give the dish the depth of flavour you expect from Japanese food. The stocks especially taste 'lacking' in complex flavour. I hoped for more.
