This is well written recipe book with lots of the recipes from the River Cottage Preserves episodes and more. The Apple Lemon Curd is luscious - a nice twist on straight lemon curd. It is well set up in the introduction pages with a lot of useful information about pectin levels in fruit and a very good section on the rules of preserve making. My only bone of contention is that these delightful A5 size books - I have several River Cottage handbooks - are not spiral bound or similar for ease of use. They certainly get a workout!

This book appears to be an updated version of The River Cottage Handbooks No. 2 - Preserves, which was published in 2008. So, will go for the newer 2010 version.
